Best Chocolate Cupcakes

4 tbsp. unsalted butter

1/4 c. veg. oil or light olive oil

1/2 c. water

Melt the butter, oil with water on low heat or in microwave in low power.

 

1 cup all purpose flour

1 cup of sugar

1/4 cup  + 2 tbsp. unsweetened cocoa powder (not dutch cocoa). I like Penzeys cocoa or Ghirardelli

3/4 tsp. baking soda

1/8 tsp. salt

1 large egg

1/2 cup buttermilk (do not substitute– this just makes it unreal)

1 tsp. vanilla extract

 

Sift flour, cocoa and baking soda.

Beat melte4d butter mixture with sugar then add the egg till mixed well. Add flour  mixture beat a low speed to mix well and then add buttermilk and vanilla. Mix until well blended.

Pour batter into lined cupcake pan bake 350° f for 20 minutes. (Do toothpick  test to ensure that 20 minutes is enough)
